Ingredients
  

Taco Base

  • 8 small corn tortillas or flour tortillas if preferred
  • 1 tbsp olive oil
  • ½ cup diced onion
  • ½ cup diced bell pepper red, green, or yellow
  • 1 jalapeño seeded and finely diced, optional
  • 1 cup black beans rinsed and drained
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • ¼ tsp salt plus more to taste
  • ¼ tsp black pepper

Egg Filling

  • 6 large eggs
  • 2 tbsp milk or unsweetened dairy-free milk
  • ½ cup shredded cheddar or Monterey Jack cheese optional

Toppings

  • 1 avocado sliced
  • ½ cup fresh salsa red or green
  • ¼ cup fresh cilantro chopped
  • 1 lime cut into wedges

Instructions
 

  • Warm the tortillas in a dry skillet for 20 to 30 seconds per side, then wrap them in a clean towel to keep them soft.
  • Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, and jalapeño, then cook for 3 to 4 minutes until softened.
  • Stir in the black beans, cumin, chili powder, salt, and black pepper. Cook for 2 to 3 minutes, stirring occasionally, until the beans are warmed through.
  • In a mixing bowl, whisk the eggs with the milk until smooth and lightly frothy.
  • Reduce the heat to medium-low, pour the eggs into the skillet, and gently stir with a spatula until the eggs are softly scrambled and just set.
  • Sprinkle in the cheese, if using, and stir until melted. Taste and adjust the seasoning as needed.
  • Divide the egg and bean filling among the warm tortillas. Top with avocado, salsa, cilantro, and a squeeze of fresh lime before serving.

Notes
