  • 1 pound Italian sausage Use hot Italian sausage for extra flavor.
  • 1 bunch kale, chopped Lacinato kale works best for this recipe.
  • 4 medium potatoes, diced Yukon gold potatoes are recommended for creaminess.
  • 1 onion, chopped onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth Ensure it's gluten-free if needed.
  • 1 cup heavy cream Can substitute with coconut milk for a vegan option.
  • to taste Salt and pepper

Preparation

  • In a large pot, cook the sausage over medium heat until browned.
  • Add chopped onion and minced garlic, cooking until softened.
  • Stir in diced potatoes and chicken broth. Bring to a boil.
  • Reduce heat and add chopped kale. Simmer until potatoes are tender.
  • Stir in heavy cream and season with salt and pepper.
  • Serve hot with crusty bread or garlic bread on the side.

Notes

For a thicker soup, mash some of the potatoes during cooking. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to three months.
