  • 2 pounds choice of meat (beef, chicken, or pork) Choose your preferred meat.
  • 4 cups seasonal vegetables (carrots, potatoes, squash) Chop vegetables for the best flavor.
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups broth (beef, chicken, or vegetable) Use vegetable broth for a vegetarian option.
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • to taste Salt and pepper
  • 1 cup cream or dairy-free milk (optional) For additional creaminess.

Preparation
  1. Start by chopping your vegetables and garlic. Cut the meat into manageable pieces, if necessary.
Layer Ingredients
  1. In the crockpot, layer the vegetables at the bottom. Add in the chopped onions, followed by the minced garlic and meat.
Seasoning
  1. Sprinkle the thyme, rosemary, salt, and pepper evenly over the meat and veggies.
Add Broth
  1. Pour the broth over everything, making sure the meat and vegetables are mostly submerged in liquid.
Cooking
  1. Cover the crockpot and set it to cook on low for 6-8 hours or high for 4-5 hours.
Finish
  1. If you want a creamy texture, stir in the cream or dairy-free milk during the last 30 minutes of cooking.

Notes

Serve hot with crusty bread or over rice. Garnish with fresh herbs like parsley. Store leftovers in an airtight container for up to 3 days in the fridge, or freeze portions for up to 3 months.
