Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted
For Frying and Serving
  • to taste Oil for frying Use a neutral oil with a high smoke point.
  • to taste Powdered sugar for dusting Dust while still warm.

Method
 

Preparation
  1. In a bowl, mix together flour, sugar, baking powder, and salt.
  2. In another bowl, combine milk, eggs, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
Frying
  1. Heat oil in a deep fryer or large pot to 350°F (175°C).
  2. Drop batter by the spoonful into the hot oil and fry until golden brown, about 2-3 minutes per side.
  3. Remove from oil and drain on paper towels.
  4. Dust with powdered sugar before serving.

Notes

For best texture, let beignets cool to room temperature before storing. Store in an airtight container for 1 day or freeze for longer storage.
