Preparation

- In another bowl, combine milk, eggs, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
Frying
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Drop batter by the spoonful into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove from oil and drain on paper towels.
- Dust with powdered sugar before serving.
Notes
For best texture, let beignets cool to room temperature before storing. Store in an airtight container for 1 day or freeze for longer storage.
