Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt

Wet Ingredients

  • ½ cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup unsalted butter, melted

For Frying and Serving

  • to taste Oil for frying Use a neutral oil with a high smoke point.
  • to taste Powdered sugar for dusting Dust while still warm.

Instructions
 

Preparation

  • In a bowl, mix together flour, sugar, baking powder, and salt.
  • In another bowl, combine milk, eggs, vanilla extract, and melted butter.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.

Frying

  • Heat oil in a deep fryer or large pot to 350°F (175°C).
  • Drop batter by the spoonful into the hot oil and fry until golden brown, about 2-3 minutes per side.
  • Remove from oil and drain on paper towels.
  • Dust with powdered sugar before serving.

Notes

For best texture, let beignets cool to room temperature before storing. Store in an airtight container for 1 day or freeze for longer storage.
