Preparation
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, eggs, and vanilla until combined.
- Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
- Turn the dough out onto a floured surface and roll to about 1/4 inch thick.
- Cut the dough into squares or desired shapes.
Cooking
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Carefully drop the beignet dough into the hot oil and fry until golden brown, about 2-3 minutes on each side.
- Remove with a slotted spoon and drain on paper towels.
- Dust with powdered sugar and serve warm.
Notes
Keep the oil at 350°F (175°C) for even frying. Do not overcrowd the pot; fry in small batches. Dust with powdered sugar right before serving so it does not melt away.
