  • 1 large Red bell pepper, thinly sliced
  • 1 large Yellow bell pepper, thinly sliced
  • 1 large Green bell pepper, thinly sliced

Dressing ingredients

  • 2 tablespoons Extra-virgin olive oil
  • 2 tablespoons Fresh lemon juice or apple cider vinegar
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Optional additions

  • ½ medium Red onion, thinly sliced
  • ¼ cup Fresh parsley or basil, chopped
  • ½ cup Feta cheese, crumbled
  • ½ cup Olives or cherry tomatoes

Instructions
 

Preparation

  • Wash the bell peppers well, remove the stems and seeds, and slice them into thin strips.

Combine the salad

  • Place all sliced peppers in a large bowl. Add any optional vegetables or herbs if desired.

Make the dressing

  • Mix olive oil, lemon juice, salt, and black pepper in a small bowl until well combined.

Toss and serve

  • Pour the dressing over the peppers and gently toss. Serve immediately or chill briefly before serving.

Notes

Use fresh, firm bell peppers for the best crunch. Slice peppers evenly for better texture. Allow the salad to rest briefly so flavors blend. Add seeds or nuts for extra crunch if desired.
