  • 4 pieces smoked sausages, sliced
  • 2 pieces carrots, chopped
  • 2 pieces potatoes, diced
  • 1 pieces onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf

Preparation

  • In a large pot, sauté the onions, garlic, carrots, and celery until softened.
  • Add the sliced sausage and cook for a few minutes.
  • Then add the potatoes, broth, thyme, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat and let it simmer for about 30-40 minutes, or until the vegetables are tender.
  • Remove the bay leaf and serve hot, garnished with fresh parsley.

Notes

For the best texture, ensure the vegetables are cut evenly to cook at the same rate. Sautéing the vegetables until they are fragrant enhances the overall flavor of the stew. Don't rush the simmering time, as it allows the flavors to meld beautifully. This stew stores well in an airtight container for up to three days and can also be frozen.
