Tini's Mac and Cheese

Ingredients
  

Pasta and Sauce Base

  • 8 oz corkscrew pasta Can substitute with elbow macaroni or shells.
  • 2 cups milk Use plant-based milk for a dairy-free version.
  • 3 tbsp butter Or use a dairy-free substitute.
  • 3 tbsp all-purpose flour

Cheese Mixture

  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup gouda cheese, shredded Can substitute or add more types of cheese.

Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Cook the corkscrew pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  • In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until it forms a paste.
  • Gradually add the milk while whisking continuously. Stir until the mixture thickens.
  • Add garlic powder, onion powder, salt, and pepper to the thickened milk mixture.
  • Remove from heat and stir in the shredded cheddar, mozzarella, and gouda until melted.
  • In a large bowl, combine the cooked pasta with the cheese sauce and mix well to coat.
  • Serve hot and enjoy!

Notes

For best texture, do not overcook the pasta and keep stirring the cheese sauce to avoid lumps. Add a bit of milk if the sauce is too thick.
