  • 3 bananas very ripe, medium/large
  • ½ cup unsalted butter 8 Tbsp, at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs lightly beaten
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp vanilla extract
  • 1 cup walnuts
  • ½ cup raisins

Preparation

  • Preheat oven to 350°F and prepare a loaf pan. Lightly roast and chop walnuts, then cool them.
  • In a mixing bowl, cream together softened butter and sugar until light and fluffy.
  • Mash bananas and add them to the batter with eggs, mixing until just combined.
  • In a separate bowl, whisk together flour, baking soda, and salt, then gradually add to the wet batter.
  • Stir in vanilla extract, walnuts, and raisins. Pour into the loaf pan and bake at 350˚F for 55-60 minutes. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

Ensure your bananas are very ripe with plenty of brown spots for the best flavor and moisture. Do not overmix the batter once the flour is added, as this can lead to a tough banana bread. Store leftover banana bread tightly wrapped at room temperature for up to 3 days or freeze for longer storage.
