Ingredients

  • 2 pieces chicken breasts, cooked and shredded Can substitute with shredded beef, pork, or chickpeas for a vegetarian option.
  • 1 cup shredded cheese (cheddar or Mexican blend) Pepper jack can be used for a spicier option.
  • 1 can black beans, rinsed and drained Pinto beans can be substituted or omitted for a simpler filling.
  • 1 cup corn
  • 1 teaspoon taco seasoning Homemade seasoning can be made with chili powder, cumin, garlic powder, and paprika.
  • 12 pieces small tortilla cups or taco shells Make sure they are gluten-free if needed.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the shredded chicken, cheese, black beans, corn, and taco seasoning. Stir the mixture well.
  • Take a baking sheet and place the tortilla cups on it, ensuring they do not touch each other.
  • Spoon the chicken mixture into each tortilla cup, being generous but careful not to overfill.

Baking

  • Bake for 15-20 minutes until the cheese is melted and bubbly.
  • Let them cool for a minute after removing from the oven.

Serving

  • Serve with sour cream and salsa on the side. Optionally, sprinkle with chopped cilantro.

Notes

Make sure the oven is preheated for the best results, and avoid overfilling the cups to prevent mess and uneven cooking. Store leftovers in an airtight container for up to 3 days.
