Preparation
- Preheat the oven to 375°F (190°C).
- Cut tortillas into circles using a cookie cutter. Press each circle into the cups of a muffin tin to form cups.
- In a mixing bowl, combine the cooked chicken, black beans, corn, and salsa. Mix well.
Assembly and Baking
- Spoon the chicken mixture generously into each tortilla cup.
- Top each filled cup with cheese.
- Bake in the preheated oven for 15-20 minutes, until tortillas are crispy and cheese is melted.
- Garnish with sliced avocado and chopped cilantro before serving.
Notes
These cups can be meal prepped by preparing the filling separately and assembling just before baking. They are also great for freezing and baking from frozen.
