  • 1 cup salsa
  • 12 small tortillas
  • 1 can black beans, rinsed and drained

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cut the tortillas into circles using a cookie cutter or a glass.
  • Place the tortilla circles into a greased muffin tin, pressing them down gently to form cups.

Filling

  • In a mixing bowl, combine the shredded chicken, salsa, black beans, and half of the cheese. Stir everything together until well combined.
  • Spoon the chicken mixture evenly into each tortilla cup and top each cup with the remaining cheese.

Baking

  • Bake the tortilla cups in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.

Serving

  • Remove from the oven and serve warm, topping with diced avocado and fresh cilantro if desired.

Notes

Ensure your oven is fully preheated before baking for optimal results. For a crispy shell, you can bake the tortillas for a few minutes before adding the filling. Avoid overfilling the cups to prevent spillage.
