  • 1 pound lean ground beef
  • ½ medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon Italian seasoning
  • ½ cup sour cream
  • 1 can condensed cream of mushroom soup (10.5 ounces)
  • 1 can corn, drained (12 ounces)
  • 2 cups shredded cheddar cheese, divided
  • 32 ounces frozen tater tots
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 375 degrees F (190 degrees C) and arrange the oven rack to the top third of the oven.
  • In a large skillet, combine the ground beef and chopped onions over medium-high heat. Cook until the beef is browned and the onions are softened, about 7-8 minutes. Drain excess fat if necessary.
  • Add the minced garlic, Worcestershire sauce, and Italian seasoning to the skillet and cook for about a minute until fragrant.
  • Lower the heat to medium, then stir in sour cream, condensed cream of mushroom soup, drained corn, and about 1/2 cup of shredded cheddar. Heat through for 1-2 minutes.
  • Transfer the beef mixture to a greased 9x13 casserole dish and spread evenly.
  • Sprinkle the remaining cheese over the beef mixture and top with frozen tater tots, covering the surface evenly.

Baking

  • Bake uncovered for 45 minutes, or until the tater tots are golden brown and the cheese is bubbly.
  • Remove from the oven, let cool slightly, then top with chopped scallions and season with salt and pepper to taste before serving.

Notes

This casserole can be made ahead and baked just before serving. It’s also freezer-friendly.
