- Arrange the sweet potato rounds in a single layer on a parchment-lined baking sheet.
Roasting

- Roast in the preheated oven for 20 to 25 minutes, flipping halfway through, until tender and lightly caramelized.
Topping
- Once the sweet potato rounds are roasted, remove from the oven and place a slice of brie cheese on each round.
- Return to the oven for an additional 5 minutes, or until the cheese has melted.
Serving
- After baking, remove the rounds from the oven and sprinkle dried cranberries and toasted pecans on top.
