Ingredients
  

For the Stuffed Squid

  • 4 pieces Squid Cleaned and ready for stuffing
  • 2 cups Spinach Fresh, washed and chopped
  • 1 cup Fresh Cheese Can substitute with ricotta or goat cheese
  • 2 cloves Garlic Minced
  • 2 tablespoons Olive Oil For sautéing
  • 1 teaspoon Salt Adjust to taste
  • ½ teaspoon Pepper Adjust to taste
  • ½ cup Bread Crumbs
  • ¼ cup Parsley Chopped

Preparation

  • Clean the squid by removing the head and insides. Rinse under cold water and pat dry. Set aside.
  • In a pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add spinach to the pan and cook until wilted, approximately 2-3 minutes.
  • Remove the pan from heat and mix in fresh cheese, bread crumbs, chopped parsley, salt, and pepper to create the filling.
  • Stuff each squid with the filling, sealing the openings with toothpicks.

Baking

  • Preheat the oven to 375°F (190°C). Place the stuffed squid in a baking dish.
  • Bake for 20-25 minutes until the squid is cooked through and slightly golden.

Notes

Serve warm. Pairs beautifully with sautéed vegetables or a light lemon sauce. Store leftovers in an airtight container for up to 2 days.
