Preparation
- Clean the squid by removing the head and insides. Rinse under cold water and pat dry. Set aside.
- In a pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add spinach to the pan and cook until wilted, approximately 2-3 minutes.
- Remove the pan from heat and mix in fresh cheese, bread crumbs, chopped parsley, salt, and pepper to create the filling.
- Stuff each squid with the filling, sealing the openings with toothpicks.
Baking
- Preheat the oven to 375°F (190°C). Place the stuffed squid in a baking dish.
- Bake for 20-25 minutes until the squid is cooked through and slightly golden.
Notes
Serve warm. Pairs beautifully with sautéed vegetables or a light lemon sauce. Store leftovers in an airtight container for up to 2 days.
