Ingredients
  

For the Stuffed Squid
  • 4 pieces Squid Cleaned and ready for stuffing
  • 2 cups Spinach Fresh, washed and chopped
  • 1 cup Fresh Cheese Can substitute with ricotta or goat cheese
  • 2 cloves Garlic Minced
  • 2 tablespoons Olive Oil For sautéing
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Pepper Adjust to taste
  • 1/2 cup Bread Crumbs
  • 1/4 cup Parsley Chopped

Method
 

Preparation
  1. Clean the squid by removing the head and insides. Rinse under cold water and pat dry. Set aside.
  2. In a pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add spinach to the pan and cook until wilted, approximately 2-3 minutes.
  4. Remove the pan from heat and mix in fresh cheese, bread crumbs, chopped parsley, salt, and pepper to create the filling.
  5. Stuff each squid with the filling, sealing the openings with toothpicks.
Baking
  1. Preheat the oven to 375°F (190°C). Place the stuffed squid in a baking dish.
  2. Bake for 20-25 minutes until the squid is cooked through and slightly golden.

Notes

Serve warm. Pairs beautifully with sautéed vegetables or a light lemon sauce. Store leftovers in an airtight container for up to 2 days.
