Preparation

  • In a skillet, heat a little olive oil over medium heat.
  • Add the onion and sauté until softened.
  • Add the spinach and cook until wilted.
  • In a bowl, whisk the eggs, then add salt and pepper.
  • Pour the eggs over the spinach and onion, and cook while stirring gently until the eggs are set.
  • Sprinkle feta cheese over the cooked egg mixture.
  • Spoon the mixture onto a whole wheat tortilla and wrap it up.
  • Serve warm.

Notes

For best results, cook on medium heat and remove the eggs just before fully set to maintain a creamy texture. You can customize the recipe by swapping ingredients as mentioned.
