  • 2 large eggs
  • 1 cup fresh spinach, chopped

  • 1 whole wheat tortilla or wrap

Method
 

Preparation
  1. In a skillet, heat a little olive oil over medium heat.
  2. Add the onion and sauté until softened.
  3. Add the spinach and cook until wilted.
  4. In a bowl, whisk the eggs, then add salt and pepper.
  5. Pour the eggs over the spinach and onion, and cook while stirring gently until the eggs are set.
  6. Sprinkle feta cheese over the cooked egg mixture.
  7. Spoon the mixture onto a whole wheat tortilla and wrap it up.
  8. Serve warm.

Notes

For best results, cook on medium heat and remove the eggs just before fully set to maintain a creamy texture. You can customize the recipe by swapping ingredients as mentioned.
