Ingredients
  

Seed Mixture

  • 1.5 cups raw sunflower seeds
  • 0.5 cup raw pumpkin seeds
  • 1 cup sesame seeds
  • 0.33 cup flax seeds
  • 2 Tbsp psyllium husk
  • 2.25 cups water
  • 0.5 tsp salt
  • 1 tsp dried rosemary or your favorite herb can use other herbs for flavor variation

Preparation

  • In a large mixing bowl, combine all the dry seeds.
  • Add the water and mix well to combine everything.
  • Let the mixture rest for about 20 minutes to thicken into a gel-like consistency.

Baking

  • Preheat your oven to 300°F (150°C) and cover a baking sheet with parchment paper.
  • Spread the mixture onto the baking sheet into a thin layer about 1/5-1/6 inch (4-5 mm) thick.
  • Bake in the preheated oven for approximately 1 hour, adjusting the time by +/- 10 minutes based on your desired level of crispiness.
  • Halfway through baking, cut the crackers into squares for easier serving.
  • Once baked, allow the crackers to cool completely before breaking them into pieces.

Notes

Store seed crackers in an airtight container at room temperature for up to a week. For longer freshness, refrigerate them. Use a variety of seeds and herbs for different flavors.
