  • 2 large Sweet Potatoes Choose firm sweet potatoes.
  • 2 tablespoons Olive Oil Extra virgin recommended.
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika Omit if preferred.
  • 1 cup Feta Cheese Goat cheese can be substituted.
  • 2 tablespoons Honey Maple syrup can be used.
  • 2 tablespoons Parsley Freshly chopped.

Preparation

  • Preheat the oven to 425°F (220°C).
  • Wash the sweet potatoes thoroughly and slice them into rounds about 1/2 inch thick.

Seasoning and Roasting

  • In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
  • Spread the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
  • Roast them in the preheated oven for about 20-25 minutes, flipping halfway through, until golden brown and fork-tender.

Finishing Touch

  • Once the sweet potatoes are roasted, sprinkle crumbled feta cheese over the rounds and drizzle them with honey.
  • Return them to the oven for an additional 5 minutes to allow the feta to slightly melt.

Serving

  • Take them out of the oven and sprinkle freshly chopped parsley on top before serving.

Notes

Ensure even cutting of sweet potato rounds for uniform cooking. Leftovers can be stored in the refrigerator for up to 3 days.
