Preparation
- Preheat the oven to 425°F (220°C).
- Wash the sweet potatoes thoroughly and slice them into rounds about 1/2 inch thick.
Seasoning and Roasting
- In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
- Spread the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
- Roast them in the preheated oven for about 20-25 minutes, flipping halfway through, until golden brown and fork-tender.
Finishing Touch
- Once the sweet potatoes are roasted, sprinkle crumbled feta cheese over the rounds and drizzle them with honey.
- Return them to the oven for an additional 5 minutes to allow the feta to slightly melt.
Serving
- Take them out of the oven and sprinkle freshly chopped parsley on top before serving.
