  • 4 pieces boneless, skinless chicken breasts Choose medium-sized breasts for easier stuffing.
  • 1 cup roasted red peppers, sliced Use jarred or homemade roasted red peppers.
  • 2 cups fresh spinach Can substitute with frozen spinach if thawed and drained.
  • 1 cup shredded mozzarella cheese Feel free to use low-fat mozzarella.
  • 2 cloves garlic, minced Fresh garlic adds a strong flavor.
  • 1 tablespoon olive oil For searing the chicken.
  • 1 teaspoon dried Italian herbs Can substitute with fresh herbs if desired.

Preparation

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix roasted red peppers, spinach, mozzarella cheese, garlic, and Italian herbs.
  • Slice each chicken breast horizontally to create a pocket.
  • Stuff each chicken breast with the mixture and secure with toothpicks if needed.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Sear each stuffed chicken breast until golden brown on both sides.
  • Transfer to a baking dish and bake for 20-25 minutes, or until chicken is cooked through.
  • Remove toothpicks, slice, and serve hot.

Notes

Serve hot from the oven. Pair with steamed vegetables, salad, rice, or pasta. For extra flavor, drizzle with balsamic glaze or sprinkle with fresh herbs.
