- In a medium bowl, whisk together ranch dressing, parmesan, minced garlic, olive oil, lemon juice, garlic powder, parsley, and black pepper until smooth.
- Add chicken cubes to a zip-top bag or container. Pour in the marinade and toss to coat evenly. Seal and refrigerate for 30 minutes to 2 hours.
- If using wooden skewers, soak them in water for 15 minutes. Then thread marinated chicken onto skewers, leaving slight gaps between pieces.
- Preheat grill to medium-high. Lightly oil the grates. Grill skewers for 10–15 minutes, turning occasionally, until chicken is fully cooked (165°F / 75°C internal temp).
- Remove from grill and rest for a few minutes. Serve with optional garnish of fresh herbs or extra parmesan.
Notes
Soak wooden skewers for 15 minutes before grilling to prevent burning. Marinate the chicken longer (up to 2 hours) for deeper flavor. Try adding veggies between the chicken pieces, or turn leftovers into a salad or wrap!
