Ingredients
  

  • 1/2 cup ranch dressing
  • 1/4 cup parmesan cheese, finely grated
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp lemon juice (optional)
  • 1/2 tsp garlic powder
  • 1 tsp dried parsley or 1 tbsp fresh parsley
  • 1/2 tsp cracked black pepper
  • 1.5 lbs boneless skinless chicken breasts or thighs, cubed
  • wooden or metal skewers
  • fresh herbs or additional parmesan (optional garnish)

Method
 

  1. In a medium bowl, whisk together ranch dressing, parmesan, minced garlic, olive oil, lemon juice, garlic powder, parsley, and black pepper until smooth.
  2. Add chicken cubes to a zip-top bag or container. Pour in the marinade and toss to coat evenly. Seal and refrigerate for 30 minutes to 2 hours.
  3. If using wooden skewers, soak them in water for 15 minutes. Then thread marinated chicken onto skewers, leaving slight gaps between pieces.
  4. Preheat grill to medium-high. Lightly oil the grates. Grill skewers for 10–15 minutes, turning occasionally, until chicken is fully cooked (165°F / 75°C internal temp).
  5. Remove from grill and rest for a few minutes. Serve with optional garnish of fresh herbs or extra parmesan.

Notes

Soak wooden skewers for 15 minutes before grilling to prevent burning. Marinate the chicken longer (up to 2 hours) for deeper flavor. Try adding veggies between the chicken pieces, or turn leftovers into a salad or wrap!
