Quick & Easy Apple Pie

A warm, classic apple pie ready in about 1 hour with a homemade crust and spiced apple filling.

Ingredients
  

For the crust
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup sugar for crust
  • 1/4 teaspoon salt
  • 6 to 8 tablespoons cold water
For the filling
  • 6 to 8 pieces apples, peeled, cored, and sliced
  • 3/4 cup sugar for filling
  • 1 teaspoon ground cinnamon
  • 2 tablespoons all-purpose flour for filling
  • 1 tablespoon lemon juice
For assembly
  • 1 piece egg, beaten for egg wash

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix together 2 cups of flour, 1/4 cup of sugar, and 1/4 teaspoon of salt.
  3. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the mixture forms a ball.
  4. Chill the dough for 10 minutes if desired.
Filling Preparation
  1. Toss sliced apples with 3/4 cup sugar, cinnamon, 2 tablespoons flour, and lemon juice.
Assembling the Pie
  1. Roll out half of the dough and place it in a pie pan.
  2. Pour the apple mixture into the pie crust.
  3. Roll out the remaining dough and place it over the filling, sealing the edges. Cut slits in the top crust to allow steam to escape.
Baking
  1. Brush the top crust with beaten egg.
  2. Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 30 to 35 minutes, or until apples are soft and crust is golden brown.
  3. Let it cool before serving.

Notes

Serve warm or at room temperature with ice cream, whipped cream, or caramel sauce. Store cooled pie at room temperature for up to 2 days or refrigerate for up to 4 days.
