Cookie Dough
- 1/2 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar packed
- 1 egg room temperature
- 1 tsp vanilla extract
- 3/4 cup pumpkin puree not pumpkin pie filling
- 1 1/2 cups all-purpose flour spooned and leveled
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp ground cloves
- 1 cup semi-sweet chocolate chips
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Add egg, vanilla extract, and pumpkin puree. Mix until fully combined.
In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chips using a spatula or spoon.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10–12 minutes or until edges are set and centers look slightly underbaked.
Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Use pure pumpkin puree for the best flavor and avoid overbaking to keep the cookies soft and moist. Add a pinch of allspice for extra warmth if desired.
