  • 12 oz cream cheese, softened Softened at room temperature for easy mixing.
  • 3/4 cup powdered sugar
  • 1/3 cup whole milk
  • 1/2 teaspoon vanilla extract
  • 8 oz whipped topping, thawed Like Cool Whip.
  • 1 20 oz can maraschino cherries, drained Or 2 cups fresh pitted cherries.
  • 1 cup shredded sweetened coconut For 'snow'.
  • Optional: 1/4 cup chopped pecans or graham cracker crumbs For serving.

Method
 

Preparation
  1. Drain cherries well and set them in a single layer in a shallow serving dish.
  2. In a bowl, beat the softened cream cheese until smooth.
  3. Add powdered sugar, milk, and vanilla. Beat until smooth and thin.
  4. Fold in the thawed whipped topping gently until mixed and light.
  5. Spoon the cream mixture over the cherries. Spread it to cover the cherries evenly.
  6. Sprinkle shredded coconut over the top to look like snow.
  7. Cover and chill for at least 2 hours so the flavors blend and the topping firms.
Serving
  1. Serve cold with small dessert spoons.
  2. Offer crackers, graham crackers, or vanilla wafers on the side for guests to scoop the mix onto a cracker.
  3. Sprinkle extra coconut or a few whole cherries for a pretty plate.

Notes

Keep covered in the fridge; lasts 2 to 3 days. Avoid leaving at room temperature for more than two hours. For a nutty aroma, add a small amount of almond extract. Consider using fresh cherries for better flavor.
