Preparation
- Drain cherries well and set them in a single layer in a shallow serving dish.
- In a bowl, beat the softened cream cheese until smooth.
- Add powdered sugar, milk, and vanilla. Beat until smooth and thin.
- Fold in the thawed whipped topping gently until mixed and light.
- Spoon the cream mixture over the cherries. Spread it to cover the cherries evenly.
- Sprinkle shredded coconut over the top to look like snow.
- Cover and chill for at least 2 hours so the flavors blend and the topping firms.
Serving
- Serve cold with small dessert spoons.
- Offer crackers, graham crackers, or vanilla wafers on the side for guests to scoop the mix onto a cracker.
- Sprinkle extra coconut or a few whole cherries for a pretty plate.
Notes
Keep covered in the fridge; lasts 2 to 3 days. Avoid leaving at room temperature for more than two hours. For a nutty aroma, add a small amount of almond extract. Consider using fresh cherries for better flavor.
