Ingredients
  

For the Soup

  • 4 cups chicken or vegetable broth Use low-sodium if preferred.
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 cups fresh greens (spinach, bok choy, etc.) Add last to keep them bright and tender.
  • 2 pieces green onions, sliced Use as a garnish.
  • Soy sauce to taste
  • Salt and pepper to taste

For the Dumplings

  • 1 package potstickers (frozen or fresh) Add directly from freezer if using frozen.

Preparation

  • In a large pot, bring the broth to a boil.
  • Add the minced garlic and ginger, and let it simmer for about 5 minutes.

Cooking

  • Add the dumplings to the broth and cook according to package instructions.
  • Once the dumplings are cooked, add the fresh greens and sliced green onions to the pot.
  • Season with soy sauce, salt, and pepper to taste.

Serving

  • Serve hot in bowls, with extra sliced green onion on top if desired.
  • A small dish of soy sauce or chili oil on the side works well.

Notes

Let the soup cool before storing in airtight containers. Store in the fridge for up to 3 days. Reheat on low heat. Avoid freezing cooked dumplings as they may change texture.
