  • 4 cups low-sodium chicken broth Substitute with vegetable broth for vegetarian version.
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 2 cups fresh spinach or bok choy Can substitute greens with kale or Swiss chard.
  • 2 tbsp soy sauce Adjust to taste.
  • 1 tsp sesame oil Add for enhanced flavor.
  • 2 green onions chopped For garnish.

  1. Gather all your ingredients to streamline the cooking process.
Cooking
  1. In a large pot over medium heat, add a splash of oil and sauté minced garlic and grated ginger until fragrant, about 1 minute.
  2. Pour in the chicken broth and bring it to a gentle boil.
  3. Once boiling, add the dumplings and cook until they are tender, about 5-7 minutes.
  4. Stir in the fresh spinach or bok choy along with soy sauce and cook until the greens are wilted, about 2-3 minutes.
  5. Drizzle sesame oil before serving.
  6. Ladle into bowls and garnish with chopped green onions.

Notes

Store leftover soup in an airtight container in the refrigerator for 3-4 days. Reheat gently on the stove or in the microwave. For freezing, separate broth and dumplings.
