  • 2 cups cottage cheese Use full-fat for richer flavor or low-fat for fewer calories.
  • 3 large eggs Whisk with cottage cheese until smooth.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini turkey pepperoni slices Save some for topping.
  • 1/4 cup grated parmesan cheese
Seasonings
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Pinch salt
  • Pinch pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Grease a 9x9-inch baking dish.
  2. In a large bowl, whisk the cottage cheese and eggs together until smooth.
  3. Stir in mozzarella cheese, most of the mini turkey pepperoni (save some for the top!), parmesan, Italian seasoning, garlic powder, salt, and pepper.
  4. Pour the mixture into the prepared baking dish.
  5. Top with the remaining pepperoni slices.
Baking
  1. Bake for 30-35 minutes, or until the bake is set and the cheese is bubbly and golden.
  2. Let it cool for a few minutes before slicing.
Serving
  1. Cut the bake into squares and serve warm.
  2. Offer a small bowl of marinara sauce for dipping and add a green salad on the side.

Notes

Cool the bake to room temperature before storing. Keep in the fridge for up to 4 days. Reheat in the oven at 325°F until warm or microwave single pieces for 45-60 seconds. For a vegetarian option, skip pepperoni and add sliced mushrooms and bell peppers.
