Ingredients
  

Egg Base

  • 3 pieces eggs Fresh, large eggs work best.
  • 60 g reduced-fat cheese, grated Can substitute with mozzarella or cheddar.
  • 1 tbsp passata Approx. 15g; can substitute with pizza sauce or salsa.
  • 20 g salami, sliced Feel free to replace with cooked bacon or vegetables.
  • to taste Mixed herbs Use fresh herbs like basil or oregano for better flavor.

Cooking

  • Melt half of the grated cheese in a non-stick frying pan over medium heat, creating a flavorful base.
  • Crack the eggs into a bowl and whisk until smooth and well combined.
  • Pour the whisked eggs over the melted cheese in the pan. Cover and cook until the bottom is firm and golden, about 3-5 minutes.
  • Carefully flip the egg-cheese base using a spatula for even cooking.
  • Spread the passata over the cooked side, add salami slices, and sprinkle the remaining cheese on top. Cover until the cheese melts and toppings are heated through.
  • Remove from the pan, sprinkle with mixed herbs, and serve hot.

Notes

Pizza Eggs are best enjoyed fresh from the pan. Pair with a side of salad or toast for a complete meal. Store leftovers in an airtight container for up to 2 days and reheat in the microwave or a pan.
