  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 cup crushed pineapple, drained
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan with butter or cooking spray.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy, about 2 to 3 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in the drained crushed pineapple and vanilla extract until combined.
  6. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes until a toothpick inserted into the center comes out clean.
  10. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For best results, ensure ingredients are at room temperature. Avoid overmixing the batter to keep the bread tender. Serve warm or at room temperature, possibly with butter or cream cheese.
