Sandwich Ingredients

  • 2 slices slices of bread (your choice) Use sourdough, whole wheat, or gluten-free if preferred.
  • 2 slices slices of cheese (mozzarella, cheddar, or your favorite) You can use provolone, Gouda, or vegan cheese as alternatives.
  • 2 tablespoons pesto Basil pesto or sun-dried tomato pesto can be used.
  • to taste Butter for spreading Use dairy-free butter for a vegan option.

Instructions
 

Preparation

  • Spread 2 tablespoons of pesto on one side of each slice of bread.
  • Place one slice of bread, pesto side up, in a skillet over medium heat.
  • Layer your cheese of choice directly on top of the bread in the skillet.
  • Take the second slice of bread and place it on top of the cheese, ensuring the pesto side is facing down.
  • Spread butter on the outer sides of both slices of bread.
  • Cook the sandwich until one side is golden brown. Carefully flip it over and cook until the cheese is melted and the bread is browned.
  • Remove the sandwich from the skillet, slice it in half, and enjoy your Pesto Grilled Cheese.

Notes

Serve hot, ideally pairing with a salad or tomato soup. Leftovers can be stored in the fridge for up to 2 days and reheated in the oven or skillet.
