Brine the Turkey

  • Start by brining the turkey using a suitable brining solution. Mix water, salt, and sugar until dissolved and soak the turkey overnight in the refrigerator.

Cook the Turkey

  • After brining, cook the turkey by your preferred method: roasting in the oven or using a smoker. Season with salt and pepper before cooking and follow specific cooking times based on turkey weight.

Make the Gravy

  • Once the turkey is cooked, let it rest and use the drippings to make gravy. Scrape the bottom of the pan, add vegetables and wine, and simmer until thickened.

Notes
