Zucchini Mixture
  • 3 medium zucchini sliced into ¼-inch rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • ½ cup Parmesan cheese freshly grated
  • ½ teaspoon salt
  • ¼ teaspoon black pepper freshly ground

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss zucchini rounds with olive oil, minced garlic, salt, and pepper.
  3. Arrange the zucchini slices in a single layer on the prepared baking sheet.
  4. Sprinkle grated Parmesan cheese evenly over each zucchini round.
  5. Bake for 18–20 minutes, or until the edges are golden and the zucchini is tender.
  6. Let cool for 5 minutes before serving. Serve warm and enjoy!

Notes

For extra crispiness, broil for 1–2 minutes at the end of baking. Add Italian herbs for more flavor, or try using a mix of Parmesan and breadcrumbs for added texture.
