  • 3 medium zucchini sliced into ¼-inch rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic minced

  • ¼ teaspoon black pepper freshly ground

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, toss zucchini rounds with olive oil, minced garlic, salt, and pepper.
  • Arrange the zucchini slices in a single layer on the prepared baking sheet.
  • Sprinkle grated Parmesan cheese evenly over each zucchini round.
  • Bake for 18–20 minutes, or until the edges are golden and the zucchini is tender.
  • Let cool for 5 minutes before serving. Serve warm and enjoy!

Notes

For extra crispiness, broil for 1–2 minutes at the end of baking. Add Italian herbs for more flavor, or try using a mix of Parmesan and breadcrumbs for added texture.
