  • 2 pieces chicken breasts, diced
  • 8 oz pasta (penne or fettuccine)
  • 1 tablespoon Cajun seasoning
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese, for serving
  • Fresh parsley, for garnish

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced chicken and season it with Cajun seasoning, salt, and pepper. Cook until the chicken is browned, about 5-7 minutes.
  3. Add the minced garlic to the pot and sauté for another minute.
Cooking
  1. Pour in the chicken broth and bring the mixture to a boil.
  2. Once boiling, add the pasta to the pot. Reduce heat to a simmer and cook until pasta is al dente, around 10-12 minutes.
  3. Stir in the heavy cream and continue to cook until heated through.
  4. Serve with a sprinkle of Parmesan cheese and garnish with fresh parsley.

Notes

For best results, avoid overcrowding the pot while cooking the chicken. Adjust the amount of Cajun seasoning to suit your spice tolerance. Leftovers can be stored in the refrigerator for up to 3 days.
