Ingredients
  

For the Crust
  • 1.5 cups Graham cracker crumbs
  • 6 tablespoons Melted butter
  • 2 tablespoons Granulated sugar
For the Cheesecake Filling
  • 16 oz Cream cheese, room temperature
  • 0.75 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy whipping cream
  • 2 teaspoons Gelatin (optional) For extra stability
For the Strawberry Topping
  • 2 cups Fresh strawberries, hulled and sliced
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Lemon juice

Method
 

  1. Step 1: Combine graham cracker crumbs, melted butter, and sugar. Press firmly into a springform pan and chill for 20 minutes.
  2. Step 2: Beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mix until combined.
  3. Step 3: Whip the heavy cream to soft peaks. Fold into the cream cheese mixture. Add dissolved gelatin if using.
  4. Step 4: Spread the cheesecake filling over the crust. Chill for at least 6 hours or overnight.
  5. Step 5: Cook strawberries, sugar, and lemon juice until softened. Mash slightly or puree for desired consistency.
  6. Step 6: Once cooled, spread strawberry topping over the cheesecake. Garnish with extra strawberries or whipped cream if desired.

Notes

For a crunchier base, you can bake the graham cracker crust at 350°F for 8-10 minutes, even for this no-bake cheesecake.
