Ingredients
  

For the Crust

  • 1.5 cups Graham cracker crumbs
  • 6 tablespoons Melted butter
  • 2 tablespoons Granulated sugar

For the Filling

  • 16 oz Cream cheese, softened Full-fat recommended for best texture
  • 3/4 cup Powdered sugar
  • 1/2 cup Lemon juice Freshly squeezed
  • 1 tablespoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy whipping cream Whipped to soft peaks

Instructions
 

  • Step 1: In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan and chill for 20 minutes.
  • Step 2: In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  • Step 3: Add lemon juice, lemon zest, and vanilla extract. Mix until well combined.
  • Step 4: In a separate bowl, whip the heavy cream to soft peaks. Gently fold into the cream cheese mixture.
  • Step 5: Spread the filling over the prepared crust. Smooth the top with a spatula.
  • Step 6: Cover and chill the cheesecake for at least 4 hours, or overnight, until set.

Notes

For extra lemon flavor, garnish with additional lemon zest or fresh lemon slices before serving.
