  • 1.5 cups all-purpose flour Sifted
  • 1 cup granulated sugar
  • 0.5 cups unsalted butter, softened
  • 2 large eggs Room temperature
  • 0.5 cups milk Room temperature
  • 0.25 cups lemon juice Fresh is best
  • 1 tablespoon lemon zest
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons salt
  • to taste Powdered sugar for dusting Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon juice and lemon zest.
Combining Ingredients
  1. In another bowl, whisk together the flour, baking powder, and salt.
  2. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined. Do not overmix.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  4. Dust with powdered sugar before serving, if desired.

Notes

Store in an airtight container for up to 2 days at room temperature. Refrigerate for up to 5 days. Can be frozen for up to 3 months.
