  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/3 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tbsp fresh basil, chopped (optional)

Instructions
 

  • Season chicken breasts with salt and pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts until golden brown, about 4–5 minutes per side. Remove and set aside.
  • In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
  • Pour in chicken broth and bring to a simmer, scraping up any browned bits.
  • Stir in heavy cream, sun-dried tomatoes, parmesan cheese, and Italian seasoning. Simmer for 2–3 minutes until thickened slightly.
  • Return the chicken to the pan and simmer for 5–7 minutes, or until cooked through and sauce thickens.
  • Remove from heat, garnish with chopped basil, and let rest for 5 minutes before serving.

Notes

Use chicken thighs for extra juiciness. Pair with mashed potatoes, pasta, or rice. Leftovers taste even better the next day!
