  • 2 large Chicken Breasts, boneless, skinless, sliced thinly
  • Salt and Pepper to taste Salt and Pepper
  • 2 tbsp Olive Oil, for searing
  • 3 cloves Garlic, minced
  • cup Sun-Dried Tomatoes, chopped
  • ½ cup Chicken Broth
  • 1 cup Heavy Cream
  • ½ cup Parmesan Cheese, freshly grated
  • 1 tsp Italian Seasoning
  • ½ tsp Crushed Red Pepper Flakes, optional for spice
  • 8 oz Pasta, such as penne or fettuccine
  • Fresh Basil, for garnish

Preparation

  • Start by boiling a pot of salted water. Add your choice of pasta and cook it according to package instructions until al dente. Drain and set aside.
  • In a large skillet over medium heat, add olive oil. Season the sliced chicken breasts with salt and pepper. Once the oil is hot, add the chicken to the skillet. Cook for about 5-7 minutes, or until the chicken turns golden brown and is cooked through. Remove the chicken from the skillet and set aside.

Making the Sauce

  • In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for about 2 minutes until fragrant.
  • Pour in the chicken broth, heavy cream, Italian seasoning, and crushed red pepper flakes. Mix well and let it simmer for about 3-5 minutes until slightly thickened.

Combining

  • Return the cooked chicken to the skillet. Stir in the cooked pasta and grated Parmesan cheese. Toss gently until the pasta is evenly coated with the creamy sauce. Adjust seasoning with salt and pepper to taste.

Serving

  • Remove the skillet from heat. Serve the pasta warm, topped with fresh basil for an aromatic finish.

Notes

Ensure the skillet is hot enough before adding the chicken for a good sear. Cook pasta just until al dente since it will continue to cook with the sauce. Be cautious with salt, especially if your chicken broth is salty.
