  • 4 medium Potatoes Starchy potatoes like Russets work best
  • 2 large Eggs Beaten
  • ¼ cup Fresh parsley Chopped
  • 1 medium Onion Diced
  • 2 cloves Garlic Mince before adding
  • 1 teaspoon Ground cumin Toast briefly before adding
  • Oil as needed Oil for frying Use enough to fry the patties

Preparation

  • Boil potatoes until tender, drain, and mash them with some texture remaining.
  • Beat the eggs and mix them into the potato mixture.
  • Chop the parsley and dice the onion; sauté briefly if desired, then add to the mixture.
  • Mince the garlic and toast cumin briefly before adding.
  • Mix the ingredients gently until they hold together.
  • Wet your hands and shape the mixture into small oval patties.

Cooking

  • Heat oil in a pan and fry the patties until golden on both sides.

Serving

  • Serve immediately with yogurt sauce or harissa.

Notes

Make sure to mash the potatoes well but leave some texture for a better bite. Sautéing the onions and garlic adds a deeper flavor. Experiment by adding paprika or coriander to enhance the taste. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or oven to restore crispiness.
