Ingredients
  

For the Potato Wedges
  • 4 medium Potato wedges You can use sweet potatoes for a healthier version.
  • 1 tablespoon Southwest seasoning
  • 1 cup Shredded pepper jack cheese Substitute with cheddar or Monterey Jack if desired.
For the Lime Crema
  • 1 lime Lime Juice will be used.
  • 1/2 cup Sour cream Greek yogurt can be used as a healthier alternative.
  • 2 tablespoons Water Adjust for desired creaminess.
For the Pico de Gallo
  • 1 medium Tomato Diced.
  • 1/4 medium Onion Diced.
  • 1 lime Lime juice To taste.
  • 1 jalapeno Jalapeno Diced; adjust based on desired spice level.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Season the potato wedges with Southwest seasoning, ensuring even coating.
Baking
  1. Place the seasoned potato wedges on a baking sheet and bake for about 25 minutes or until golden brown and crispy, flipping halfway through.
  2. Once baked, remove from the oven and sprinkle shredded pepper jack cheese on top, then return to the oven until melted.
Making Lime Crema
  1. In a small bowl, mix lime juice, sour cream, and water to create the lime crema.
Preparing Pico de Gallo
  1. In another bowl, combine diced tomato, onion, lime juice, and jalapeno, then mix well.

Notes

For extra crispiness, soak the potato wedges in water for 30 minutes before seasoning and baking. Avoid overcrowding the baking sheet for optimal cooking.
