Korean BBQ Meatballs with Spicy Mayo Dip

Ingredients
  

  • 500 g ground beef or chicken
  • 1 egg
  • 1/4 cup panko breadcrumbs
  • 1 tbsp soy sauce
  • 1 tbsp gochujang (Korean chili paste)
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tsp sesame oil
  • 2 tbsp neutral oil, for cooking
  • 1/4 cup mayonnaise
  • 1 tbsp sriracha
  • 1 tsp lime juice
  • chopped green onions, for garnish (optional)
  • toasted sesame seeds, for garnish (optional)

Instructions
 

  • In a mixing bowl, combine ground meat, egg, breadcrumbs, soy sauce, gochujang, garlic, ginger, and sesame oil.
  • Form the mixture into small meatballs, about 1 inch in diameter.
  • Heat neutral oil in a skillet over medium heat. Cook the meatballs in batches until browned and cooked through, about 10–12 minutes total.
  • In a small bowl, mix together mayonnaise, sriracha, and lime juice to make the spicy dip.
  • Serve the meatballs hot with the spicy mayo on the side. Garnish with green onions and sesame seeds if desired.

Notes

Use ground turkey or chicken as a leaner option. You can bake or air fry the meatballs instead of pan frying. Make the spicy mayo ahead for stronger flavor. Adjust gochujang to taste for more or less heat.
