Ingredients
  

Cookie Dough

  • 8 oz Cream Cheese Use mascarpone cheese as a substitute if needed.
  • 1 cup Cold Butter Make sure the butter is cold for a flaky texture.
  • 2 cups All-Purpose Flour Can be substituted with gluten-free flour blend.
  • 1 tsp Pure Vanilla Extract

Filling and Topping

  • 12 oz Can of Fruit Pie Filling Choose from Apricot, Raspberry, Cherry, etc.
  • Confectioners' Sugar For topping the cookies.

Preparation

  • Mix together cold butter, cream cheese, and vanilla extract in a stand mixer until creamy. Slowly add in the flour until well blended. Let the dough chill in the refrigerator for about one hour.

Rolling and Cutting

  • Preheat your oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper or lightly greasing it. On a lightly floured surface, roll out the dough until it is about 1/8 inch thick. Slice the dough into squares using a pastry cutter.

Filling and Shaping

  • Place a small amount of the fruit filling in the center of each square. Fold the corners of the square over the filling to meet in the middle, slightly overlapping them.
  • Place a bit more filling between the overlapping corners to secure the cookies during baking.

Baking

  • Arrange the cookies on the prepared baking sheet and bake for 12-15 minutes. Check halfway through and gently press any opened corners back into place. Transfer to a cooling rack once finished.

Serving

  • Once cooled, sprinkle the cookies with powdered sugar for a sweet finish.

Notes

Ensure the dough is chilled before rolling and filling. Store in an airtight container for up to a week. Freeze for up to three months.
