Method
Marinate Chicken
- Mix honey, 2 tablespoons lime juice, lime zest, 2 tablespoons olive oil, minced garlic, cumin, smoked paprika, salt, and pepper in a bowl.
- Put chicken in the bowl and coat well. Let it sit for 10–20 minutes.
Cook Chicken
- Heat a skillet over medium heat. Add a little oil.
- Place chicken in the pan. Cook for 5–7 minutes per side, until the chicken is done and the sauce is sticky.
Prepare Avocado
- While chicken cooks, mash the avocado in a bowl.
- Add 1 tablespoon lime juice, 1 tablespoon olive oil, salt, and pepper. Mix until smooth.
Serve
- Warm the rice if needed. Slice the cooked chicken.
- Serve rice, top with sliced chicken, add a scoop of mashed avocado, and sprinkle cilantro, chili flakes, and sesame seeds.
Notes
Use fresh lime for the best flavor. Let the chicken marinate at least 10 minutes for more taste. If you use thighs, cook a little longer until they reach a safe temperature. To keep avocado green, add lime juice and store it tight. For a creamy twist, add a little yogurt to the avocado mix.
