Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the honey, minced garlic, soy sauce, rice vinegar, sesame oil, and ground ginger. Whisk until well blended.
  3. Pat the chicken thighs dry with paper towels. Season both sides with salt and pepper.
  4. Place chicken in a resealable bag or shallow dish. Pour marinade over chicken, ensuring all pieces are coated. Seal or cover and marinate for at least 15 minutes, up to 2 hours.
Cooking
  1. Heat a large oven-safe skillet over medium-high heat. Add chicken thighs skin-side down and sear for about 5-7 minutes until golden brown.
  2. Flip chicken pieces, pour remaining marinade into the skillet, and transfer to the preheated oven.
  3. Bake for about 20-25 minutes, or until the internal temperature reaches 165°F (75°C). Use a meat thermometer for accuracy.
  4. Halfway through baking, baste chicken with sauce from the skillet.
  5. Remove from oven and let rest for 5 minutes before serving.
  6. Garnish with chopped green onions and sesame seeds if desired.

Notes

To ensure success, maintain oven temperature and do not overcook the chicken. Using a meat thermometer is recommended to check for doneness.
