- Preheat your oven to 350 degrees F (175 degrees C).
- Grease or line an 8 by 8 inch baking pan with parchment paper.
- In a large bowl, whisk together the melted butter and brown sugar until well combined.
- Add the egg, honey, and vanilla extract, then whisk until everything is smooth.
- Stir in the flour, salt, and 1/2 teaspoon of ground cinnamon. Mix until just combined.
- Pour the batter into the prepared baking pan, spreading it evenly.
- In a small bowl, mix granulated sugar with the remaining 1/2 teaspoon of cinnamon. Sprinkle this mixture over the batter.
- Bake in the preheated oven for 22 to 25 minutes. Check doneness with a toothpick.
- Let the blondies cool completely in the pan before cutting them into squares.
