  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice can substitute with jasmine or basmati for different flavor
  • 2 cups chicken broth
  • ½ cup BBQ sauce can substitute with teriyaki sauce for a lighter option
  • ¼ cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Optional Ingredients

  • 1 cup mixed vegetables like bell peppers, peas, or corn to increase nutritional value
  • Chopped green onions for garnish

Preparation

  • Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Heat a skillet over medium heat and add the seasoned chicken. Sear for 3–4 minutes on each side until golden brown. Remove from the skillet and set aside.
  • In a separate bowl, combine BBQ sauce, honey, soy sauce (if using), and minced garlic. Stir until mixed.

Cooking

  • In the same skillet, add the uncooked rice. Toast for 1–2 minutes, stirring frequently.
  • Pour in the chicken broth and half of the BBQ mixture, and stir to combine.
  • Place the seared chicken back into the skillet and pour the remaining sauce over the top.
  • Cover the skillet and simmer on low heat for about 15 minutes.
  • After 15 minutes, add mixed vegetables (if using), cover again, and cook for an additional 5 minutes or until the rice is tender and the chicken is fully cooked.

Finishing Touch

  • Let the dish sit for 5 minutes before serving. Garnish with chopped green onions.

Notes

Make sure your skillet is preheated properly, and avoid overcooking the chicken. Store leftovers in an airtight container for 3–4 days.
