Ingredients
  

  • 2 eggs
  • 1/2 cup fresh spinach
  • 1/4 cup sliced mushrooms
  • 2 tbsp shredded cheddar cheese
  • 1 tsp olive oil
  • to taste salt and pepper

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add sliced mushrooms and sauté for 2–3 minutes until softened.
  • Stir in spinach and cook until wilted, about 1 minute.
  • Crack in the eggs and scramble everything together.
  • Cook until eggs are set, then top with cheddar cheese. Let melt slightly before serving.

Notes
