Ingredients
  

For the cookies

  • 1 cup mixed nuts (almonds, walnuts, cashews) Feel free to use any nuts you like.
  • ½ cup seeds (chia seeds, sunflower seeds, pumpkin seeds) Chia seeds can be substituted with flaxseeds or hemp seeds.
  • 1 cup rolled oats Use certified gluten-free oats for a gluten-free option.
  • ¼ cup honey or maple syrup Maple syrup can be replaced with agave syrup or brown rice syrup.
  • ¼ cup nut butter (peanut, almond, or cashew) Consider using sunflower seed butter for a nut-free option.
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the mixed nuts, seeds, oats, cinnamon, and salt. Stir well.
  • In another bowl, mix together the honey (or maple syrup), nut butter, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients. Stir until everything is well combined and a dough forms.
  • Using a tablespoon, scoop portions of the dough onto a lined baking sheet, leaving space between each scoop.
  • Gently flatten each cookie to your desired thickness using the back of a spoon.
  • Bake in the preheated oven for 12-15 minutes, until golden brown.
  • Let the cookies cool on the sheet for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

For best results, ensure your oven is fully preheated. For chewier cookies, slightly underbake them. Avoid overmixing the dough to prevent tougher cookies.
