  • 2-3 tbsp white or yellow miso paste Adjust to taste
  • 1 tbsp fresh ginger, sliced or grated Use fresh for best flavor
  • 1 clove garlic, minced Optional ingredient
  • Juice of 1 lemon lemon About 2-3 tbsp juice
  • 4 cups low-sodium vegetable broth or bone broth (or water) Broth adds more flavor
  • 1 tsp soy sauce or tamari Optional, for depth
  • 2 green onions chopped green onions For garnish
  • Fresh herbs (cilantro, parsley, or baby spinach) Optional garnish

Instructions
 

Preparation

  • Bring the broth (or water) to a gentle simmer in a pot.
  • Add the ginger (and garlic if using) and let it simmer for about 10 minutes to infuse the flavor.
  • Remove from heat and let cool slightly—do not bring to a hard boil after the miso is added.
  • In a small bowl, whisk the miso paste with a little warm broth to smooth it out, then stir it back into the pot.
  • Add the lemon juice and soy sauce or tamari (if using). Stir to combine.
  • Pour into mugs or bowls and garnish with chopped green onions and fresh herbs before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat gently, avoiding boiling after adding the miso. You can freeze it in a freezer-safe container for up to 3 months.
