  • 2 pieces grilled chicken breasts, sliced Use pre-cooked rotisserie chicken for quicker preparation.
  • 4 cups mixed greens Can substitute with spinach, kale, or romaine.
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • 1 piece bell pepper, diced
  • ½ piece red onion, thinly sliced
  • ½ cup olives, pitted and sliced
  • ½ cup feta cheese, crumbled Substitute with goat cheese or omit for dairy-free.
  • ¼ cup tzatziki sauce Can substitute with yogurt dressing or vinaigrette.
  • 2 tablespoons olive oil
  • to taste Salt and pepper Season according to preference.

Preparation

  • In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, and olives. Mix them together gently to keep the veggies intact.
  • Layer the sliced grilled chicken on top of the salad mixture in the bowl, ensuring it’s evenly distributed.
  • Drizzle the olive oil over the salad and season with salt and pepper to taste. Toss gently to combine the flavors without bruising the greens.
  • Top the salad with crumbled feta cheese and serve it either with tzatziki sauce drizzled on top or on the side for dipping.

Notes

Serve fresh and keep the dressing separate if making in advance to prevent the greens from wilting. Aim for a balance of soft and crispy textures for the best experience.
