  • 1 lb ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups cooked rice
  • 1 cup corn (fresh or frozen)
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • to garnish Fresh cilantro

Instructions
 

Preparation

  • In a large skillet, heat a drizzle of olive oil over medium heat.
  • Add the diced onion and cook until soft.
  • Add the minced garlic and sauté for another minute until fragrant.

Cooking

  • Add the ground turkey to the skillet, breaking it apart with a spatula.
  • Cook until it’s no longer pink, about 5-7 minutes, stirring occasionally.
  • Once the turkey is cooked, add the cooked rice, corn, black beans, salsa, cumin, chili powder, salt, and pepper.
  • Stir everything together well and cook for about 5 minutes until heated through.

Finishing

  • Sprinkle the shredded cheese on top of the mixture.
  • Remove from heat and cover the skillet for a couple of minutes until the cheese has melted.
  • Serve garnished with fresh cilantro.

Notes

Make sure the turkey is cooked thoroughly; it should reach an internal temperature of 165°F. Avoid overcooking the mixture once you add the cheese to prevent it from becoming rubbery. For a spicier kick, feel free to add jalapeños or hot sauce. Store leftovers in an airtight container for up to 3 days.
